While waiting in line to check out at the grocery store, I usually ignore the outrageous news headlines of all those in Hollywood and beyond. But today, there was a special issue of People magazine, “Cook with the Stars!” Intrigued, I picked up a copy and was pleasantly surprised.

My Favorite Surprise

Eva LongoriaWhat instantly piqued my interest was a fabulous picture of Eva Longoria on the cover-with her holding a mixing bowl! I always pictured her as someone having meals prepared for her around the clock; maybe this came from her persona on the show “Desperate Housewives.” Either way, I was excited to see that she shared a love for cooking as much as I did. After reading the featured article on Eva, I learned that she grew up in a family of cooks, and they cooked with real, natural foods. This definitely can be attributed to her great figure and healthy glow. I think that we often make the assumption that women like Eva Longoria are just “lucky” and are born with great figures. But if you dig a little deeper, you will often find that they are committed to a healthy diet and fitness regimen. Keep an eye out for her first cookbook due in April, “Eva’s Kitchen: Cooking with Love for Family & Friends.” I can’t wait to get my hands on a copy!

A Chef in Progress

Another favorite feature in the issue was Grammy-winner Michael Buble’. He didn’t grow up cooking; he decided to learn once he moved out on his own. His father was a commercial fisherman, so he definitely knew how to recognize good, quality food when he tasted it. As he got the hang of cooking, he began falling in love with entertaining his friends-famous for his chicken wings or vegetable risotto. What I loved most about his article is when he said,” You don’t have to be fancy. Just use wonderful ingredients to get the best food.” So true, Michael!

My favorite recipe in this issue was Top Chef Antonia Lofaso’s Stir-fried Noodles. I love that this dish is a healthy meal for four and it’s under $10! Here is her recipe Stir-fried Noodles. Try it out and tell me what you think.

Paula Deen is an American chef, restaurateur and Emmy Award-winning Food Network television personality. Deen’s primary culinary focus is Southern food. The first evening of the cooking courses found the four of us putting on hair nets and aprons. Of course we all thought this was quite funny. We knew we had joined a serious class when the instructor threatened to separate us. Instead of being a fun activity where we could enjoy each others company the cooking courses became quite stressful. The first night the instructor timed us as we cut up onions and vegetables for the stir fry dish that we were making. She had a timer with a bell along with a whistle to make sure we all dropped our knives when she said that the time was up.

At our first break we went outside to get some fresh air. One of the other students heard us talking about how serious the course was. She said that she had taken other cooking courses and that they had been a great deal of fun and more laid back. She thought that the instructor was filling in for someone else. We made it through the first night. I did learn a few ways to cut off time in meal preparation but I was not that excited about going back. At work the next day we all agree that we would go the next week and if things did not improve we would skip the rest of the cooking courses and spend the time having drinks and dinner.

The next week there was a different instructor for the cooking class. She was a great deal of fun and had all of us laughing as we prepared short cut meals that could be frozen for later use. The evening flew by. It is amazing the difference the personality of the instructor can have on how much you enjoy a class as well as on how much you learn. The rest of the cooking courses were taught by the fun instructor so we kept going and learned a great deal.

Jambalaya is a southern dish arising out of Louisianas rice production and all its traditions. Rice is a fundamental part of all Jambalaya dishes; it absorbs all the flavors of all the other ingredients giving us all those beautiful and distinctive tastes we have come to love.

Now to an important rule. After the rice has been added, the jambalaya should be turned but never stirred. This is to prevent the grains of rice from breaking up. Usually a jambalaya dish is turned just three times after the rice is added with the cook scooping from the bottom of the pot to mix the rice evenly with all the other ingredients. In larger pots shovels are used to turn the Jambalaya!

Jambalaya recipes can be made up from beef, fresh pork, chicken, duck, shrimp, oysters, crayfish or sausage, combined typically with onions, garlic, tomatoes,cayenne pepper, green peppers, celery and other seasoning; and of course, the all important long grained white rice. The typical preparation of Jambalaya involves creating a rich stock from vegetables, meat, and seafood whereupon white-grained long rice is added and the flavors absorbed as the rice cooks.

The most common jambalaya dish is Creole jambalaya or red jambalaya. This dish originates from the French Quarter of New Orleans. The mixture is then left to simmer for 20 to 60 minutes.

The story goes that Creole-Jambalaya was a best stab, by the Spanish at making the traditional Spanish paella at a time when saffron was too costly due to import costs. As a result tomatoes were substitute for saffron. As time passed Caribbean spices were added and altogether this turned a best attempt at making a paella into a new dish called Jambalaya.

A second Jambalaya dish, popular in southwest and south-central Louisiana, is Cajun jambalaya; a dish that contains no tomatoes. The meat is browned in a cast-iron pot and removed then onions, celery, and green peppers are added and cooked until soft. Stock and seasonings are added and the meats returned to the pot. The mixture is then left to simmer for one hour and then finally rice is added to the pot. The Jambalaya is then covered and left to simmer over a low heat for half an hour without stirring.
